Cookbooks to hone your BBQ skills

In the Northern hemisphere our thoughts are turning to outdoor eating and outdoor cooking, with barbecue at the centre of activities. We have a trio of books hot off the press and newly added to ckbk to freshen up your outdoor mealtimes.

Barbecue chef Tony Ramirez draws influence from his Cajun and Filipino heritage, which is reflected in his book Backyard BBQ with Fire and Spice: Filipino and Cajun Inspired Recipes for the Smoker and Grill. Chinese-American Barbecue: Big-Flavor Asian BBQ from the Smoke Queen is the debut cookbook from Chinese-Malay BBQ chef and restaurateur Winnie Yee. Winnie was born in Malaysia and moved to Los Angeles when she was 6. Her culinary journey reflects a childhood love of Chinese-Malay live fire cooking, and her later exploration of wider Chinese cooking and Texas-style smoking traditions.

Recipes include a section on BBQ Sauces and one on Chinese Mother Sauces, then are divided by type of meat or seafood. Try BBQ Fried Rice with Lap Cheong (Chinese sausage) or this Black Tea Hot Smoked Salmon. There is even a Dessert section, with delights like this Smoked Asian Pear and Apple Pie.

Food writer, recipe developer and BBQ expert Brad Prose has combined two of his food obsessions to create Epic BBQ Sandwiches: Next-Level Burgers, Melts, Sliders, Tacos, and more, Grilled or Smoked to Perfection. As he writes:

Cinco de Mayo

In Mexico, Cinco de Mayo (Fifth of May) commemorates the victory of Mexico’s army over France at the Battle of Puebla in 1862. That date has now become a time to celebrate Mexican culture and heritage. Food is often central to the festivities, including traditional dishes such as tamales, mole, enchiladas and tacos.

Ingredient focus: morels

Morels are a type of mushroom, and a particular delicacy in Europe, the US, and across China. They have an unusual upright body, and long pitted head. Due to mostly unsuccessful attempts at cultivation, they remain a forager’s treat, and are among the earliest spring mushroom.

With a delicate distinct flavor, they work well in a range of dishes, adding an aromatic earthiness.

They respond well to drying, which can preserve some of the crop for use year round. They should not be eaten raw, as they contain a small amount of the toxin helvellic acid. This doesn’t survive cooking, so they are safe to eat once cooked.
