“The truth is, BBQ has never been just about the food. It’s an event, a community, and the straw that stirs the drink. BBQ takes time. That’s hanging out time, with music playing and people laughing. More than anything, BBQ (at least the way I do it) is a reason to connect with your tribe and spend quality time with the people who mean the most to you. It’s memories in the making.” Tony Ramirez

Some of my earliest core food memories come from sandwiches I’ve had over the years. Some are cultural icons, some a little bit crazy: stuffed peanut-butter-French-toast, grilled Monte Cristos, and burgers with entire grilled cheese sandwiches as buns.(...)Sandwiches are my love language, and this book is full of everything I’ve learned: where to start, where to experiment, and where to throw the rules out completely. Let’s fire up some meat, stack it high with bold flavors, and get ready to make your sandwich game legendary.”

In Mexico, Cinco de Mayo (Fifth of May) commemorates the victory of Mexico’s army over France at the Battle of Puebla in 1862. That date has now become a time to celebrate Mexican culture and heritage. Food is often central to the festivities, including traditional dishes such as tamales, mole, enchiladas and tacos.

Morels are a type of mushroom, and a particular delicacy in Europe, the US, and across China. They have an unusual upright body, and long pitted head. Due to mostly unsuccessful attempts at cultivation, they remain a forager’s treat, and are among the earliest spring mushroom.
With a delicate distinct flavor, they work well in a range of dishes, adding an aromatic earthiness.
They respond well to drying, which can preserve some of the crop for use year round. They should not be eaten raw, as they contain a small amount of the toxin helvellic acid. This doesn’t survive cooking, so they are safe to eat once cooked.
